The local produce was one of the things that blew our minds when we first came to Tasmania.
The flavour! The variety! And the seasonal differences! And we had no idea that there were so many varieties of potatoes, and we had never tasted them so fresh.
We source our produce locally as much as possible. We know our suppliers, we have their personal phone numbers. We call them by name and many have become friends. They often drop by with new things for us to try.
Meet Derek, who introduced us to mangel-wurzel. A member of the beet family, it is a natural fit to the Australian palate, although it not well known. It has fast become a firm favourite with our guests.
