At this time of year, as we ramp up for the new season, it is time to review menus.
Some dishes we would be reticent to drop. Some guests contact to check that we are still serving one thing or the other.
But for people who love food as much as we do, it is almost impossible to not have dozens of new ideas for the season, all delectable.
This week we have been taste-testing potted duck and pork rillette. It is a tough job, but someone has to do it!
